CASTELFRANCO AND TAROCCO ORANGE SALAD
Here is a salad that is perfect for winter. Seasonal bitter leaves of castelfranco (aren't they beautiful?), sweet segments of Tarocco orange, toasted Marcona almonds and grilled chicken. A mixture of extra virgin olive oil, sea salt and the juice gathered from when I segmented the orange dressed this salad.
It was delicious. This salad should come with a guarantee to brighten up any otherwise dull British winter day.
